Carson Foss | Owner

Carson Foss was born and raised in Ogden, where he’s proud to call home with his wife, Cassandra, and their two sons, Evan and Marcus. When he’s not brewing, Carson can be found spending time with family and friends, playing hockey, skiing, mountain biking, or enjoying just about any outdoor adventure.

A commercial pilot for most of his career, Carson has visited at least one brewery in every state—a feat he takes great pride in. Combining his extensive “field research” with over a decade of brewing experience, Carson is thrilled to bring his passion for craft beer to life at UTOG Brewing Co. His goal is to create beers that reflect his love for Ogden and share them with communities across Utah.


Brett Walker, Head Brewer

Brett is living his dream as the head brewer at UTOG Brewing Co., where he combines passion, creativity, and expertise to craft exceptional beers. A Northern Utah native, Brett takes pride in calling this area home. His brewing journey began in 2009 as a homebrewer, experimenting with flavors and techniques in his own kitchen.

With years of experience in the food and beverage industry, Brett has worked as a bartender, restaurant manager, beer packager at a Salt Lake brewery, and even with the Utah Department of Alcohol Beverage Control. These roles not only deepened his appreciation for beer but also sharpened his skills in crafting quality brews.

When UTOG opened its doors in 2019, Brett seized the opportunity to join the team, quickly forming a strong partnership with owner Carson. Together, they are dedicated to brewing beer that stands out in both quality and flavor.

Brett lives in Ogden with his wife and their dogs. In his free time, he enjoys playing hockey, snowboarding, and soaking in the vibrant community he calls home.

Sean Ellis, Chef

Chef Sean Ellis

Hi, I’m Chef Sean Ellis, and I’m thrilled to join the UTOG Family! I hail from New York City, where I spent my formative years in Queens. My passion for cooking ignited when I was about sixteen, and I quickly discovered it was a fantastic way to express myself.

I’ve always been a creator, whether it’s through food or music. For me, food is the best medium to share my creativity and connect with others on a deeper level. I’ve developed a deep love for experimenting with bold flavors, which transforms simple dishes into unique culinary experiences.

I started my culinary journey with The Farm To Table Program at The International Culinary Center in NYC, and then I ventured into a diverse array of restaurants, from cozy gastropubs to Michelin-starred establishments.

After the COVID-19 pandemic, I decided to embrace a change of scenery and moved to Utah. I’ve been living here since working in kitchens throughout Ogden and Ogden Valley.
